Crispy Fish Sandwiches with Slaw

As far as fish sandwiches go, this one is pretty classic.  As I did my research for creating this recipe, I found that  traditional crispy fried fish with slaw is really the way to go.  It just works so well, don’t fix it if it’s not broken (I say that, but I will still try, sigh…life as a food blogger).   If you’re not a huge fish fan, or eat a lot of it like I do, this sandwich is a great way to consume more fish without feeling like you are… it’s just a sandwich!

Black and Blue Veggie Burger

Black and blue is a flavor combination that is hard to beat!  Tangy blue cheese and spicy blackening season complement each other so well, it is a classic combination.  Before I started to focus on whole foods, I would put blackening seasoning and blue cheese on frozen burgers.  This homemade black and blue veggie burger is so much better, and better for you!Black and Blue Veggie Burger

Roasted Potato and Trout Salad

I didn’t grow up eating a lot of salads.  But boy do I love them now!  Anything can be tossed together and called a salad.  This salad is traditional in the sense that I use greens to bulk it up.  Roasted potatoes and flaky trout make this dish incredibly filling, which is rare to find in a salad.  Pair it with the creamy dilled dressing and you have a winner!

Vegetarian Paella with Smoked Tofu

I first came across paella in a cooking magazine.  It was a seafood paella and used whole lobsters and shrimp.  I didn’t know what the dish was at the time, but I could tell it was very extravagant indeed.  I was a poor college student and would never be able to afford such a luxury.  However, the dish intrigued me and stayed in the back of my mind for some time.
