Baked Arugula Falafel

Baked Arugula Falafel by Alison's AllspiceI love falafel, and homemade falafel is easier to make than you might think.  This baked arugula falafel recipe is a great way to incorporate more greens into your diet, and it still tastes like falafel that you crave.

When I first tried this recipe, I really thought the arugula would make the falafel taste different from my favorite all-cilantro version of falafel.  The difference, however, was very subtle. Continue reading

Clam and Arugula Pasta

Clam and Arugula Pasta by Alison's AllspiceI enjoyed this clam and arugula pasta a lot this spring when the arugula was growing in the garden.  It is a light and refreshing meal that is quick and easy to make.  I can’t wait for my fall arugula patch to grow so that I can start enjoying it again!

I am a huge fan of simple veggie pasta dishes.  Pasta, especially spaghetti, is such comfort food for me.  When you add seafood such as clams, it takes elevates comfort food to the next level! Continue reading

Radish Carrot and Arugula Chickpea Salad

Radish Carrot and Arugula Chickpea Salad by Alison's AllspiceI whipped up this radish carrot and arugula chickpea salad on a whim one day, just using up what was in the fridge.  It was so good that I had to make it again to and share it with you all!

Chickpea salads are so simple and easy to make, they are a favorite go-to for me. I often make salads in advance for workday lunches.  If you want to prep this salad in advance, don’t mix in the arugula until you are ready to serve.  Continue reading

Creamy Pesto Arugula and Tomato Wraps

Creamy Pesto Arugula and Tomato Wraps by Alison's AllspiceI grow arugula in my garden every year.  It is such an easy plant to grow, it sprouts early, loves the colder months, and grows faster than any lettuce I have grown.  This also produces my favorite problem, I end up with lots of arugula to find interesting new ways to use. Therefore, today I am sharing my creamy pesto arugula and tomato wraps.

The creamy pesto sauce idea was developed by one of those lightbulb-moments.  I wanted to add protein to the wrap, but didn’t want roll-y chickpeas all over the place making the wrap difficult to eat. I opted for white beans instead of chickpeas, and decided to puree them into a flavorful spread, like hummus, but different. Continue reading

Arugula Pesto Lasagna Roll Ups

Arugula Pesto Lasagna Roll Ups by Alison's AllspiceHands in the air if you love lasagna!  Me too.  But do you ever have leftover sheets of lasagna noodles?  My box always seems to have just a few more than I really need for a recipe.  I created this arugula pesto lasagna roll ups recipes to use up those extra noodles!

I made this recipe with 5 lasagna noodles, because that’s how many I had to use.  It just so happens that I could not have fit more into a 9×9 inch pan as well.  Feel free to increase the recipe and make more roll ups, just plan on using a bigger pan. Continue reading

Arugula Wild Rice Salad with Red Wine Vinaigrette

Arugula Wild Rice Salad by Alison's AllspiceI love to grow arugula in my garden, but the homegrown arugula is much stronger in flavor than the baby arugula you get from the store.  I started making this arugula wild rice salad to tame those strong garden fresh flavors!

The wild rice helps to subdue the peppery arugula by bulking up the salad with a mild earthy flavor (which pairs quite nicely).  I also add cranberries for sweetness, pecans for crunch and protein, and feta for a salty bite. Continue reading

Lemony Zucchini Arugula Pesto

Lemony Zucchini Arugula Pesto by Alison's AllspiceEvery morning I eat my breakfast cereal over a cooking magazine.  My husband thinks I’m crazy to eat food and read about it at the same time, but it works for me.  Heck, maybe I am crazy, only time will tell!  I recently came across the idea to make zucchini into a pesto.  I turned from the table, looked at my pile of garden zucchini on the counter, and immediately marked the page for later!  My lemony zucchini arugula pesto is great as a dip or a spread! Mushroom Swiss Sandwich Melts with Arugula

Mushroom Swiss Sandwich Melts with Arugula by Alison's AllspiceIs any body else on a total mushroom kick right now?  I am just realizing that my last two recipe posts also had mushrooms in them, Two Potato Hash with Mushrooms, and Mushroom Lentil Bolognase.  Mushrooms are the kind of food that you either love or hate, and I love them.  In my opinion, they are best when sauted, like in today’s Mushroom Swiss Sandwich Melts with Arugula recipe! Roasted Potato and Trout Salad

I didn’t grow up eating a lot of salads.  But boy do I love them now!  Anything can be tossed together and called a salad.  This salad is traditional in the sense that I use greens to bulk it up.  Roasted potatoes and flaky trout make this dish incredibly filling, which is rare to find in a salad.  Pair it with the creamy dilled dressing and you have a winner!
