Pepper and Onion Naan Breakfast Pizza by Alison's AllspiceBreakfast pizza has long been a favorite food of mine.  I don’t make it very much, however, because it’s usually not very healthy, and it isn’t traditionally fast.  This pepper and onion naan breakfast pizza is healthier, as well as quick and easy!

Have you tried naan flat breads?  I was first exposed to them as an side for curries, but they have many more uses!  I used toaster size naan (mini) in this recipe, which was perfect for a single egg!

Variations to the Pepper and Onion Naan Breakfast Pizza recipe:

  1. If you can’t find mini toaster size naan, simply put 2 eggs onto a large piece!
  2. Don’t like runny eggs?  You can cook the pizza longer in the oven, to make the egg set, or you could top this pizza with scrambled eggs!
  3. Use your favorite veggies!  Mushrooms, olives, tomatoes, artichokes, asparagus, and spinach would all be delicious options as well.

This pepper and onion naan breakfast pizza recipe is fast and easy. Use mini multigrain naan and top with veggies, eggs, and cheese for a healthy breakfast!

Ingredients
  • 4 mini multigrain naan
  • ½ large bell pepper, sliced
  • ¼ cup diced yellow onion
  • ½ cup shredded cheddar
  • ½ cup shredded mozzarella
  • 4 large eggs
Instructions
  1. Preheat oven to 375 F.
  2. Place naan on a baking sheet and top with sliced bell pepper and diced onion, leaving the center open for the egg.
  3. Sprinkle the edges of each naan with 2 TBS cheddar cheese.
  4. Working one at a time, crack an egg into a ramekin or small bowl. Gently poor the egg onto the center of the naan. Repeat with remaining eggs.
  5. Finish the pizza by sprinkling each with 2 TBS mozzarella.
  6. Bake in the preheated oven for 11 minutes for a runny egg, or 15 minutes for a firm egg. Let the pizza cool for a few minutes before serving. After 11 minutes, the egg may look too runny, but will set as the pizza cools.
