Cilantro Lime Southwest Black Bean Salad

- 1½ cups cooked black beans (or 1 can rinsed and drained)
- 1 cup frozen corn kernels, thawed
- ¼ cup diced red onion
- 1 large roma tomato, diced
- 2 large garlic cloves, minced
- ½ cup minced cilantro (stems and leaves)
- ½ tsp cumin and red pepper flake, each
- ¼ tsp salt and pepper, each
- 1 TBS olive oil
- Juice from ½ a lime (1-2 TBS)
- Mix together black beans, corn, onion, tomato, garlic, cilantro, cumin and red pepper flake in a large bowl.
- Whisk together olive oil, lime juice, salt and pepper.
- Pour over the bean mixture and toss to coat.
- Garnish with extra cilantro leaves if desired.
