As a pescatarian, I eat lots and lots of vegetarian meals, with a few fish or seafood meals thrown in for good measure. I am weird and LOVE eating fish. At home, we eat it about once a week. This being said, can you believe that I haven’t posted a fish recipe since I posted Smoked Trout Fish Cakes in October??? Crazy, I know. Well I’ve got a few more coming your way. I have been working on fish tacos recently, and this chipotle baked fish tacos with pico slaw is definitely a fun ad healthy way to enjoy some fish! Continue reading →
Today I am sharing my new favorite taco recipe! If you are planning to celebrate Cinco De Mayo tomorrow, you will want to stock up on radishes and sweet corn to make these black bean street tacos with radish corn salsa! They are made with traditional Mexican fare including corn tortillas, simple seasoned black beans, sweet corn, cilantro, and queso fresco. Throw in some seasonal and colorful radishes to the salsa and you’ll have a taco everyone will be talking about! Continue reading →
Tacos have always been a food staple of mine. Before I started blogging, tacos only came in one form, traditional. The kind with a classical taco seasoning. This Lentil Pecan Taco is my current day version of that traditional taco. After watching many other fantastic bloggers play with the idea of what a taco should be, I have ventured out and found many more uses for tacos. This grilled zucchini black bean and corn tacos recipe is a summertime favorite! Continue reading →
Tacos are by far one of the most awesome foods out there. No, seriously. They can be prepared in so many ways, and for so many diet preferences. Plus, they are delicious! In my avocado tostadas post I raved about tacos, and compared tostadas to the awesomeness of a taco. I love tacos so much that I have a taco pizza recipe, and a taco stuffed shells recipe. This lentil pecan tacos recipe is a traditional taco recipe, made to mimic what meat-eaters call a classic taco. Continue reading →
For a while, my family and I were hooked on my fish tacos recipe. We would eat them every week. I always had red cabbage in the fridge to top them with zesty slaw. We are not tired of the fish tacos yet, but it is good to switch things up sometimes. These black bean tacos with garlic red cabbage slaw are a regular in our rotation now. They are perfect for summer because they don’t take much time to make, which leaves more time for fun! Continue reading →
It’s Monday morning and it’s raining. Days like this really make you appreciate the weekend! The weather this weekend was beautiful and I managed to get outside to do some yard work. It has been a long spring for us in Southern Illinois, and I have been trying to soak up as much as possible before the summer heat sets in. These fish tacos with pineapple salsa are a great refreshing dinner after spending the day in the sun! Continue reading →
Tacos are considered a kings food in my house. Tostadas are flat tacos, right? Well, not really. Tostada means “toasted.” It’s kind-of hard to toast a taco because all the ingredients are wrapped up inside it’s crunchy shell (or soft shell depending on your preference). Tostadas and tacos have very similar (if not the same) ingredients, therefore, we are making room for toasty tostadas at the king’s table! Especially these avocado tostadas!
This recipe is my favorite. I mean it, I am so excited to share this recipe. Guacamole is something that should be easy to make. And this recipe is delicious as well. I made this recipe by testing time and time again, until I came up with the perfect combination. I stock all the ingredients, except the avocado, in my pantry so I can whip it up at any time!
If you haven’t noticed yet, I post a lot of fish recipes using trout. That’s right, you guessed it. I am a trout fisherman… fisherwoman. That’s better. I always seem to have plenty of trout in my freezer, and sometimes I need to find creative ways to use it up so that I can plan more fishing trips!
