Roasted Red Cabbage with Garlic Vinaigrette

Roasted Red Cabbage with Garlic Vinaigrette by Alison's AllspiceI first started roasting cabbage a long time ago and for some reason I got away from it.  This spring, I have been trying many variations of this recipe and this roasted red cabbage with garlic vinaigrette is by far my favorite.

This recipe can be made with red cabbage, green cabbage, or both.  The red cabbage has better flavor, in my opinion, and its dark color helps to keep the cabbage from looking burnt when it is nicely caramilzed and crispy. Continue reading

Roasted Asparagus with Creamy Dill Sauce

Roasted Asparagus with Creamy Dill Sauce by Alison's AllspiceFriends, can you beleive that this is the first time I have tried roasting asparagus?!? Me either.  Grilling it is usually my go-to method.  One night when it was raining, I decided against grilling so I tried this roasted asparagus with creamy dill sauce.

If you are an asparagus fan like me, you will come back to this recipe time and time again.  I have made it three times already this season and cannot get enough! Continue reading

Mushroom Parmesan Baked Brown Rice Risotto

Mushroom Parmesan Brown Rice Risotto by Alison's AllspiceRisotto is one of the most common ways to make rice in Italy.  Once you have tried it, you will completely understand why.  It has a creamy mouthfeel that is not a usual characteristic of rice.  Try my mushroom parmesan baked brown rice risotto to see what I mean.

Traditonally, risotto is made with arborio rice.  It is a short grain white rice that readily releases its starches to produce the creamy texture.  I used brown rice in my version because it is higher in protein and fiber. Continue reading

Gluten Free Zucchini Tots

Gluten Free Zucchini Tots by Alison's AllspiceHappy New Year everyone!  Today I am having a flash back to the summer months when I had so many zucchini that I didn’t know what to do with them all.  These gluten free zucchini tots were a staple during summer, and area a great way to start the new year!

I am not a new year resolutions person.  It just doesn’t suit me.  I perfer the moto “moderation in everything.”  To me means that you don’t need to feel guilty for life’s small pleasures. Continue reading

Old Fashioned Scalloped Potatoes

Old Fashioned Scalloped Potatoes by Alison's AllspiceGrandma used to make these old fashioned scalloped potatoes for every special occassion.  They are a family favorite, and today I am happy to share them with the Alison’s Allspice family.

If you are asking yourself, where’s the cheese?  Well friend, you are looking for potatoes au gratin, not scalloped potatoes.  Scalloped potatoes are made with a creamy sauce, but no cheese. Continue reading

Tzatziki Pasta Salad with Chickpeas

Tzatziki Pasta Salad with Chickpeas by Alison's AllspiceIf you are like me, you still have some summer garden produce lingering that needs to be used.  Even though it is October, I still have garden cucumbers and tomatoes that are delicious in this tzatziki pasta salad with chickpeas.

Has anyone else had a busy fall?  I feel like I am so far behind on all my projects, including blog posts.  I had extra time at the end of summer to photograph some delicious recipes, and now they are finally making it onto the blog when the produce is almost out of season.  Better late than never I suppose. Black Bean Taco Pasta Salad by Alison's AllspiceDo you guys ever have those moments when you see a picture of a recipe and you just have to make it!?  Well it happenend to me when I saw two of my favorite ingredients together: black beans and pasta!  I made my own healthy tweeks to this black bean taco pasta salad recipe.

Asparagus Snap Pea Pasta Salad

Asparagus Snap Pea Pasta Salad by Alison's AllspiceEvery morning while I’m eating my breakfast, I love to read a cooking magazine.  Some people read newspapers, others social media, but I’m all about diving into recipes!  This asparagus snap pea pasta salad was inspired by a similar recipe I came across recently.

The recipe was for a lemon dill orzo, and my garden dill has only just started to sprout.  My asparagus and snap peas are in full swing, however, so I took the idea and changed it based on what I had. Continue reading

Feta and Herb Coleslaw

Feta and Herb Coleslaw by Alison's AllspiceOne of the vegetables that I always have in my fridge is red cabbage.  It can add crunch and color to almost any dish, even as a simple side like this feta and herb coleslaw.

The sauce is blended up in the food processor, and you simply mix it with sliced cabbage.  This is a seriously easy side that takes almost no time or effort.  Continue reading

Lemon Dill Zucchini Fritters with Yogurt Sauce

Lemon Dill Zucchini Fritters with Yogurt Sauce ny Alison's Allspice I ate these lemon dill zucchini fritters with yogurt sauce for dinner last week.  It was one of those nights that I just didn’t want to make anything else.  But that’s how I roll.

I’m an entree girl, very seldom do I make a main and side dish.  That’s why all my veggie burger recipes make 4, because I eat 2 for dinner!  Also, egg rolls.  I eat them as an entree as well.  It’s tasty.  Why not? Continue reading
