Do you ever find yourself in need of a light meal or side dish for a gathering, and you need it in a hurry?  I make this quick edamame corn salad with apple cider vinaigrette regularly because it comes together so quickly.  It’s also really convenient because the ingredients are easy to keep on hand for those oh-shoot moments when you realize you forgot all about your sister’s cookout! My parents taught me how to make a grilled cheese sandwich at a very young age.  They encouraged me to cook as a kid, and maybe that’s why I enjoy it so much today – it takes me back to my youth.  Back then, my grilled cheese sandwiches were simply made with cheddar, but this Gouda grilled cheese with apricot ginger spread is a delicious adult take on the simple and convenient grilled cheese sandwich. This week I have been having a lot of fun playing around with cracker toppings.  Bite size food has to be able to impress in that single bite, so you know the flavors have to be good.  Therefore, sampling all those flavors, such as my Banh Mi Crackers, has been a lot of fun, and delicious.  The Breton Crackers that I received samples of have been great.  I received the original flavor, which is quite tasty, and really  enjoy their light and crisp texture.  The size of the cracker is large enough to top with lots of veggies and smear with sauces, such as my Tzatziki Cucumber Dill Crackers. As a kid my family used to have snack nights.  In lieu of dinner, we would have a tray full of finger foods, usually loaded with crackers, cheese, and dips, as well as fruit and veggies.  When Breton Crackers sent me samples of their original crackers with tender-crisp texture and delicious flavor, I knew they would be perfect for snack night. I wanted my crackers to be loaded with veggies, so I chose a theme that uses lots of veggies, the banh mi sandwich.  These banh mi veggie cracker bites are fun little bites that you’ll keep reaching for on your snack night! Rhubarb Lime Sparkling Cocktail by Alison's AllspiceThis month, the recipe reduxers were challenged to make cocktails/mocktails!  This recipe challenge was entirely new to me.  I have never designed a drink – not one, not even a smoothie!!  I knew I wanted to use fresh fruit to create a great summertime sipper, so I started by doing my research on how to include it in a drink.  There were 2 obvious options, infuse the fruit in a simple syrup or into the alcohol.  I decided to infuse a simple syrup because it was a shorter and simpler task.  I tried this recipe with both raspberries and rhubarb.  Rhubarb was the clear winner, and the rhubarb lime sparkling cocktail was born!
