Holiday Butternut Pecan Salad with Berry Vinaigrette

Holiday Butternut Pecan Salad with Berry Vinaigrette by Alison's AllspiceIn early September, I visited a small Italian cafe for lunch.  They had a pumpkin ravioli and butternut squash salad on special that I tried and loved!  The salad came topped with cold ravioli, and a mixed berry vinaigrette on the side.  I loved all the fall flavors, and the colors reminded me of the holidays.  This months recipe redux theme was to create “naturally-colored/naturally-dyed holiday fare.”  When I recreated this holiday butternut pecan salad with berry vinaigrette, I knew it was perfect for the redux! Roasted Broccoli Steaks and Chickpeas with Yogurt Sauce

Roasted Broccoli Steaks and Chickpeas with yogurt sauce by Alison's AllspiceThis months recipe redux theme was to create a gut-healthy meal.  When I think of gut health, I think of two things: fiber and probiotics.  I made roasted broccoli steaks and chickpeas with yogurt sauce.  Yogurt is my favorite food-based probiotic, and it makes a delicious, creamy sauce.  I choose broccoli and chickpeas because they have two different types of fiber that are both great for gut health- more on this later.  Finally, to make it a full meal, I plated the roasted broccoli and chickpeas over barley! Sheet Pan Eggplant Parmesan Stacks

Sheet Pan Eggplant Parmesan Stacks by Alison's AllspiceThis month’s recipe redux challenge was to create a healthy sheet pan meal. If you read here often, you know I don’t really do the whole main dish and side dish kind of meals associated with a lot of sheet pan recipes.  I tinkered with ideas of sandwich melts and veggie burgers with fries. However, I have been crazy busy this fall and put off this photo shoot until the last minute and did not have those ingredients in the house.  I had planned to make eggplant Parmesan, so I converted it to sheet pan eggplant Parmesan stacks!   Continue reading

Slow Cooker Italian Lentil Stuffed Zucchini Boats

Slow Cooker Italian Lentil Stuffed Zucchini Boats by Alison's AllspiceThis month’s theme for the recipe redux was to avoid heating up the kitchen by using a cool cooking appliance (ie not the oven).  I love my big slow cooker for soups, but I don’t eat many soups during summer.  The zucchini in my garden have been plentiful for a few weeks now, at one point I had a pile of 14 on my kitchen counter!  Therefore, zucchini boats were in order.  To fit in with the redux theme, I made slow cooker Italian lentil stuffed zucchini boats!
