Grilled Shrimp Tostadas

Grilled Shrimp Tostadas by Alison's AllspiceWhen I get out my charcoal grill, I don’t like to go back and forth between the house and the grill.  Instead, I just cook everything on the grill.  In this grilled shrimp tostadas recipe, you will grill both the shrimp and the corn tortillas to make the crispy tostada shell.

I find grilling shrimp on a stick much easier than one-by-one, and kabob sticks take up much less space than a grilling basket when it comes to storage. Continue reading

Sweet Potato Black Bean Tostadas

Sweet Potato Black Bean Tostadas by Alison's AllspiceI had 2 sweet potato plants in my garden this summer and I finally harvested them yesterday. It’s sad to see the garden finally be done for the season, but it is exciting to have a great sweet potato harvest this year to use in my sweet potato black bean tostadas!

I absolutely adore sweet potatoes in spicy dishes.  The sweet and the heat are made for each other!  In this dish I use red pepper flake to add plenty of kick. Continue reading

Baked Imitation Crab Chimichangas

Baked Imitation Crab Chimichangas by Alison's AllspiceMy favorite local Tex-Mex restaurant has the most delicious seafood chimichangas that inspired me to make my own healthier version at home.  My baked imitation crab chimichangas are just as rich a creamy as well as easy on the wallet.

I tried many times to make seafood chimichangas with real shirmp and scallops.  Somehow I just could never nail the flavor.  When I tried them with imitation crab, I made a few more changes that also made them a tad healthier, and we love them! Continue reading

Grilled Sweet Potato Black Bean Quesadillas

Grilled Sweet Potato Black Bean Quesadillas by Alison's AllspiceFriends, I love to grill.  At least once a week I fire up the charcoal and enjoy some time on the patio.  This week I am working with Cabot Cheese to create budget-friendly grilling recipes. My grilled sweet potato black bean quesadillas are simple to make, as well as hearty and satisfying.

I received free samples of Cabot Cheese mentioned in this post. By posting this recipe I am entering a recipe contest sponsored by Cabot Cheese and am eligible to win prizes associated with the contest. I was not compensated for my time. Continue reading

Soft Zucchini Taco Shells

Soft Zucchini Taco Shells by Alison's AllspiceMy husband has said hands down, this soft zucchini taco shells recipe is his favorite way to enjoy the gluttony of zucchini that has come out of our garden this summer.  It might be a good way to sneak some veggies in for picky eaters too!

What make this recipe a taco shell and not just a tortilla?  Masa harina is the flour used to make corn tortillas, the base for most authentic tacos.  I use it here to give these tortillas the flavor of a corn tortilla, and help bind the zucchini together. Continue reading

Mushroom Lentil Enchiladas

Mushroom Lentil Enchiladas by Alison's AllspiceThis is hands down my favorite enchilada recipe.  When I make enchiladas, I don’t bother with other recipes because this mushroom lentil enchiladas recipe is the best! The caramalized swiss cheese is enough to make me swoon!

I have posted a similar recipe before (find it here), but I have improved upon it by adding some subtle spices that round out the earthiness of the mushrooms and lentils. Seriously guys.  Best. Enchiladas. EVER! Continue reading

Veggie Breakfast Quesadilla

Veggie Breakfast Quesadilla by Alison's AllspiceMexican food is my aboslute favortie cuisine, so I figured, why not have it for breakfast?  This veggie breakfast quesadilla is loaded with scrambled eggs, diced veggies, and cheddar cheese!

Honestly, this recipe is so simple and quick, you could make it for a speedy weeknight dinner, or easy on-the-go lunch as well.  It doesn’t even really have the “breakfast for dinner” vibe like when you have pancakes for dinner. Continue reading

Fresh Green Tomato Salsa Verde

Fresh Green Tomato Salsa Verde by Alison's AllspiceFriends, it has finally gotten cold here.  Like frost on your windsheld cold.  I pulled all my green tomatoes out of the garden last weekend, and made this delicous fresh green tomato salsa verde!

I had 8 lbs of green tomaotes, so there was plenty to make this green tomato mince pie as well as many batches of salsa.  Keep reading below to hear about some of the variations I tried. Continue reading

Pineapple Sriracha Tempeh Tacos

Pineapple Sriracha Tempeh Tacos by Alison's AllspiceOne of my favorite tempeh recipes is my gyro tempeh tacos.  I used it as inspiration when I made these pineapple sriracha tempeh tacos.  They are fast, fresh, and perfect for summer!

The pineapple sriracha combo has a great sweet and spicy complex.  I flavored the tempeh very modestly, just so that it wouldn’t be bland, and added some crunchy cabbage as filler. Continue reading

Mole Black Bean Tostadas with Slaw

Mole Black Bean Tostadas with Slaw by Alison's AllspiceA few months ago, I developed an easy homemade mole sauce recipe.  Most of the time I think of meat based dishes when I think of mole sauce.  Therefore, I have been playing with the sauce finding good vegetarian uses, like these mole black bean tostadas with slaw!

If you missed it, the first mole sauce recipe I posted was the mole jackfruit street tacos.  This recipe is moist and delicious, but I thought it was lacking protein. Therefore, I started working with mole and black beans. Continue reading
