Heirloom Cherry Tomato Balsamic Jam

Heirloom Cherry Tomato Balsamic Jam by Alison's AllspiceI started most of my garden plants from seed this year.  The cherry tomatoes have been the most interesting to see mature.  They were an heirloom variety, but for some reason I expected that they would still be cherry red.  If have two plants, one produces purple tomatoes, and the other gold!  Surprise!  The tomatoes have still been a delicious treat this summer, and I especially love them in this heirloom cherry tomato balsamic jam! Mushroom Swiss Sandwich Melts with Arugula

Mushroom Swiss Sandwich Melts with Arugula by Alison's AllspiceIs any body else on a total mushroom kick right now?  I am just realizing that my last two recipe posts also had mushrooms in them, Two Potato Hash with Mushrooms, and Mushroom Lentil Bolognase.  Mushrooms are the kind of food that you either love or hate, and I love them.  In my opinion, they are best when sauted, like in today’s Mushroom Swiss Sandwich Melts with Arugula recipe! Small Batch Veggie Lasagna

Back when I posted my Lentil Loaf recipe I told you all that meatloaf was a favorite food of mine as a child.  Well, my other favorite food was lasagna.  Mom would always ask us what meal we wanted to have for our birthdays, and I always chose lasagna.  Now I make a veggie version, and I love this small batch veggie lasagna because it only makes 4 servings.  With only two of us in the house, we don’t have to eat lasagna until we are tired of it! Grilled Zucchini Black Bean and Corn Tacos

Grilled Zucchini Black Bean and Corn TacosTacos have always been a food staple of mine.  Before I started blogging, tacos only came in one form, traditional.  The kind with a classical taco seasoning.  This Lentil Pecan Taco is my current day version of that traditional taco.  After watching many other fantastic bloggers play with the idea of what a taco should be, I have ventured out and found many more uses for tacos.  This grilled zucchini black bean and corn tacos recipe is a summertime favorite! Black Bean Beet Enchiladas

Black Bean Beet Enchiladas with Sour CreamAlright so, this is not a traditional way to use beets.  However, I am not a traditional girl, either.  At home, we have been loving quick Mexican inspired food this  summer, and these black bean beet enchiladas were no different.  This recipe uses the whole beet, the root and the greens!  Check out the variations section if your beets didn’t come with the greens. Beer Battered String Bean Fries

Beer Battered String Bean FriesLast week I was poking around on my pinterest account finding and sharing ideas for recipes.  I came across a recipe for crunchy green bean fries that were coated in panko bread crumbs.  In the past, I have tried something similar with asparagus, and it’s not so easy.  Panko does not stick well to skinny vegetables, but it sticks very well to your fingers!  When I picked up my CSA this week and saw that I had string beans to use, I just knew I had to try and make a fantastic fries recipe!  The seasoning is just right on these beer battered string bean fries!
