Quick Cilantro Garlic Seared Shrimp

Quick Cilantro Garlic Seared Shrimp by Alison's AllspiceYou know, I have really been on a cilantro kick recently!  I didn’t always like cilantro,  however.  I found it to be an incredibly over-powering flavor and never used it in my dishes.  It’s funny how tastes change, though.  I tried cilantro on this jalapeno tomato and cilantro pizza and couldn’t get enough.  I started trying it on other things, like cilantro lime black bean salad, and this weeks sweet potato salad.  Needless to say, I’m hooked!  This recipe, quick cilantro garlic seared shrimp is a weeknight favorite because shrimp cook in a flash! Chipotle Butternut Squash Queso

Chipotle Butternut Squash Queso by Alison's AllspiceDuring football season, I am always challenged to come up with indulgent, cheesy finger foods that have a healthy twist.  I find that trying to make a snack healthy by reducing fat or other indulgent flavors usually makes it less exciting.  Instead I focus on adding something to the dish to make it more nutritious.  I use creamy butternut squash in this queso dip to add body and color, and mix in spicy chipotles and melty cheese to make it fun!  Try my chipotle butternut squash queso for your next game day! Creamy Spinach Artichoke Quesadillas

Creamy Spinach Artichoke Quesadillas by Alison's AllspiceThis week has been a very busy week for me (stories to come!), and has left me with little time to do my usual menu planning.  When dinner time came around the other night, I was scrounging through the fridge trying to come up with a plan.  I always start by looking at what vegetables I have, because I try to center my eating habits around getting plenty of veggies.  When I realized the best combo I had was spinach and artichoke, all I needed was cheese and a delivery system to make a meal.  I used my leftover spinach tortillas from my Zombie Burritos recipe to make these creamy spinach artichoke quesadillas! Sheet Pan Eggplant Parmesan Stacks

Sheet Pan Eggplant Parmesan Stacks by Alison's AllspiceThis month’s recipe redux challenge was to create a healthy sheet pan meal. If you read here often, you know I don’t really do the whole main dish and side dish kind of meals associated with a lot of sheet pan recipes.  I tinkered with ideas of sandwich melts and veggie burgers with fries. However, I have been crazy busy this fall and put off this photo shoot until the last minute and did not have those ingredients in the house.  I had planned to make eggplant Parmesan, so I converted it to sheet pan eggplant Parmesan stacks!   Continue reading

Lemony Zucchini Arugula Pesto

Lemony Zucchini Arugula Pesto by Alison's AllspiceEvery morning I eat my breakfast cereal over a cooking magazine.  My husband thinks I’m crazy to eat food and read about it at the same time, but it works for me.  Heck, maybe I am crazy, only time will tell!  I recently came across the idea to make zucchini into a pesto.  I turned from the table, looked at my pile of garden zucchini on the counter, and immediately marked the page for later!  My lemony zucchini arugula pesto is great as a dip or a spread! Tzatziki Cucumber Dill Crackers

Tzatziki Cucumber Dill Crackers by Alison's AllspiceDisclosure: I received free samples of Breton Crackers mentioned in this post. By posting this recipe I am entering a recipe contest sponsored by Breton Crackers and am eligible to win prizes associated with the contest. I was not compensated for my time.

This week I have been having a lot of fun playing around with cracker toppings.  Bite size food has to be able to impress in that single bite, so you know the flavors have to be good.  Therefore, sampling all those flavors, such as my Banh Mi Crackers, has been a lot of fun, and delicious.  The Breton Crackers that I received samples of have been great.  I received the original flavor, which is quite tasty, and really  enjoy their light and crisp texture.  The size of the cracker is large enough to top with lots of veggies and smear with sauces, such as my Tzatziki Cucumber Dill Crackers. Banh Mi Veggie Cracker Bites

Banh Mi Veggie Cracker Bites by Alison's AllspiceDisclosure: I received free samples of Breton Crackers mentioned in this post. By posting this recipe I am entering a recipe contest sponsored by Breton Crackers and am eligible to win prizes associated with the contest. I was not compensated for my time.

As a kid my family used to have snack nights.  In lieu of dinner, we would have a tray full of finger foods, usually loaded with crackers, cheese, and dips, as well as fruit and veggies.  When Breton Crackers sent me samples of their original crackers with tender-crisp texture and delicious flavor, I knew they would be perfect for snack night. I wanted my crackers to be loaded with veggies, so I chose a theme that uses lots of veggies, the banh mi sandwich.  These banh mi veggie cracker bites are fun little bites that you’ll keep reaching for on your snack night! Asian Cabbage Baked Egg Rolls with Tempeh

Asian Cabbage Baked Egg Rolls with Tempeh by Alison's AllspiceI’m not really a side dish person.  I love to cook.  It’s a great release at the end of the day to come home and find my rhythm in the kitchen.  However, I find it most enjoyable when there are fewer pieces of the puzzle to keep track of.  Side dishes don’t fit that routine well, therefore I tend to make and eat a single thing every night.  These Asian cabbage baked egg rolls with tempeh fit that theme perfectly.   Continue reading

Rhubarb Lime Sparkling Cocktail

Rhubarb Lime Sparkling Cocktail by Alison's AllspiceThis month, the recipe reduxers were challenged to make cocktails/mocktails!  This recipe challenge was entirely new to me.  I have never designed a drink – not one, not even a smoothie!!  I knew I wanted to use fresh fruit to create a great summertime sipper, so I started by doing my research on how to include it in a drink.  There were 2 obvious options, infuse the fruit in a simple syrup or into the alcohol.  I decided to infuse a simple syrup because it was a shorter and simpler task.  I tried this recipe with both raspberries and rhubarb.  Rhubarb was the clear winner, and the rhubarb lime sparkling cocktail was born!
