As a kid my family used to have snack nights.  In lieu of dinner, we would have a tray full of finger foods, usually loaded with crackers, cheese, and dips, as well as fruit and veggies.  When Breton Crackers sent me samples of their original crackers with tender-crisp texture and delicious flavor, I knew they would be perfect for snack night. I wanted my crackers to be loaded with veggies, so I chose a theme that uses lots of veggies, the banh mi sandwich.  These banh mi veggie cracker bites are fun little bites that you’ll keep reaching for on your snack night!

Banh Mi Veggie Cracker Bites by Alison's Allspice Banh Mi Veggie Cracker Bites by Alison's Allspice Banh Mi Veggie Cracker Bites by Alison's Allspice Banh Mi Veggie Cracker Bites by Alison's Allspice Banh Mi Veggie Cracker Bites by Alison's AllspiceThese cracker bites only use 5 ingredients, besides the cracker, so they are really easy to whip up in no time.  You can serve the cracker bites all made up and pretty on a platter, or bar-style, with all the toppings out for everyone to use as much or as little as they like.  I recommend building the crackers with the mayo on top of the cucumber slice instead of on top of the cracker, otherwise you may wear the mayo when you take a bite and it gets squished out the other side!!

Variations to the Banh Mi Veggie Cracker Bites recipe:

  1. I love the spicy sriracha mayo.  If you want to make your own, using a few more ingredients, simply mix together a scant 1/2 cup mayo, and 1 TBS sriracha.
  2. Pickled veggies are classic on a bahn mi sandwich.  I pickled carrots, but you could choose to pickle radishes as well.
  3. Pick another flavor of Breton Crackers,  such as the sweet potato and ancient grains.

Banh Mi Veggie Cracker Bites are the perfect appetizer. Having only 6 ingredients, they are easy to make! Try them with sriracha mayo and pickled carrots!

Serves: 24 appetizer bites
Ingredients
Pickled Carrots
  • ½ cup seasoned rice vinegar
  • 1 cup grated carrot
Bites
  • 1 cucumber, sliced (about 24 slices)
  • ½ cup sriracha mayo (such Lee Kum Kee)
  • ½ box Breton Original Crackers (about 24)
  • 8 cilantro stems (about 24 leaves)
Instructions
Pickled Carrots
  1. In a microwave safe liquid measuring cup, microwave the seasoned rice vinegar until it just starts to bubble, about 1 minute. Pour over the grated carrot and let rest for 30 minutes.
Bites
  1. Spread sriracha mayo over the cucumber slices and place each on top of a cracker. Top with a cilantro leaf on one side, and a pinch of pickled carrots on the other.
Notes
This recipe will take less time if you don't top all the crackers and simply serve bar-style.
